Frying Spices

You can mix the spices to be fried in a small bowl with a little water or add directly to the cooking dish. The water will help prevent the spices from burning or sticking to the cooking dish – more water can be sprinkled while frying as necessary. Unless a recipe states otherwise, use a low heat to fry the spices to also prevent it from burning and sticking. Frying or roasting spices will also assist in gently releasing their distinct flavours.
